The Leaves
The leaves had a wonderful frolic.
They danced to the wind's loud song.
They whirled, and they floated, and scampered.
They circled and flew along.
The moon saw the little leaves dancing.
Each looked like a small brown bird.
The man in the moon smiled and listened,
And this is the song he heard.
The North Wind is calling, is calling,
And we must whirl round and round,
And then, when our dancing is ended,
We'll make a warm quilt for the ground.

message, photo of her daughter, Naomi, and wonderful fall
cheesecake recipe. Thank you, Lisa!
"While we were waiting for our referral I came across your
site, and it helped just to see other families in their process
and of course the pictures of their adorable children! I still
love to look at all the people traveling in China on your site,
and the updates . . . While we were waiting for our daughter I
made cheesecakes to raise some money for the costs. One of the
favorites for this time of year was the Caramel Apple."
Caramel Apple Cheesecake
Crust:
1 cup graham cracker crumbs
3 tablespoons sugar
½ teaspoon ground cinnamon
2 tablespoons finely chopped pecans
Filling:
3 packages (8 oz. each) cream cheese, softened
¾ cup sugar
3 eggs
¾ teaspoon vanilla extract
Topping:
2 ½ cups copped peeled apples
1 tablespoon lemon juice
¼ cup sugar
½ teaspoon ground cinnamon
6 tablespoons caramel ice cream topping, divided
Whipping cream
2 tablespoons chopped pecans
Combine the crust ingredients; press onto the bottom of a
lightly greased 9-in spring-form pan. Bake at 350 for 10
minutes; cool. In a mixing bowl, beat cream cheese and sugar
until smooth. Add eggs; beat on low just until combined. Stir in
vanilla. Pour over crust. Toss apples with lemon juice, sugar
and cinnamon; spoon over filling. Bake at 350 for 55-60 minutes
or until center is almost set. Cool on a wire rack for 10
minutes. Carefully run a knife around edge of pan to loosen.
Drizzle with 4 tablespoons caramel topping. Cool for 1 hour.
Chill overnight. Remove sides of pan. Just before serving,
garnish with shipped cream. Drizzle with remaining caramel;
sprinkle with pecans. Store in refrigerator. Serves 12-14
