There are two desserts that always say "home" to me - - my mother's
apple pie, and my mother's apple crisp! The following recipe is
so very easy, so very delicious, and will fill your home with
the sweet scent of apples and cinnamon. Served warm with
ice-cream . . . mmmmm, you will love this perfect autumn
dessert!
I asked my mother where this old, family-favorite recipe
originated, expecting her to say from my grandmother or a
long-time family friend and then share some homey details with
me . . . alas, she found it years ago on the Quaker Oats box! So while it
doesn't have quite the story I was hoping for, I know you'll
still love it! Enjoy!
Kathleen's Apple Crisp
4 cups peeled, sliced apples
1 tablespoon lemon juice
Topping:
1/3 cup flour
1 cup uncooked oatmeal (quick oats, not instant)
1/2 cup packed brown sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/3 cup melted butter or margarine
My mother like to use Macintosh or Cortland apples. Peel and
slice apples, then arrange them evenly in a baking pan or casserole;
sprinkle with lemon juice. Next, combine dry ingredients in a bowl,
add melted butter and mix with a spoon until crumbly. Spread evenly over
apples.
Bake at 350 degrees for about 40 minutes or until apples are soft and
tender.
This is an easy recipe to double.
Baking time may vary according to the size and shape of your
pan, amount you make, and kind of apples you use. |
