Enjoy today's darling kiddos, dressed up in their Halloween
finest . . . can someone say, "Trick or Treat!!!"
And many thanks to myadoptionwebsite friend Brandi for
her contributions to our Fall Festival - - this yummy recipe and
photo of sweet little Jackson, dressed as a peacock in October
2007. Brandi says, "The is a fall favorite, Chicken Tortilla
Soup. This soup cooks in the crock-pot so it is a great meal
for a busy day. We have it every year on Halloween."
Chicken Tortilla Soup
4 Uncooked, boneless, skinless chicken breast halves
2 15oz. cans black beans, undrained
2 15 oz. cans low sodium mexican stewed or Rotel tomatoes
1 c. low sodium salsa (whatever heat level you prefer)
4 oz. can green chilies, drained
14.5 oz. can or bottle tomato sauce
2 can cheddar cheese soup
Extras: tortilla chips, shredded cheese, sour cream
1. Combine all ingredients (except extras) in a large crock pot.
2. Cover, cook on low for 8 hours.
3. Just before serving, remove chicken and slice or shed into
bite sized pieces, add back to soup.
4. To serve, put a handful of chips in individual soup bowls.
Ladle soup over chips. Top with cheese and or sour cream. Check
back soon for the second recipe Brandi sent me . . . something
surprisingly fun for fall! |
