Myadoptionwebsite mom Cathy sent the following
message, apple butter recipe, and darling fall photo - - thanks
so much, Cathy!!
"We love fall - the crisp
air, the warm colors, the burnt scent of a good outdoor bonfire.
It was last fall that we received Peyton's referral . . . To
have Peyton home where he is now meandering through pumpkin
patches of orange is priceless!
He gets so excited every time he sees a pumpkin!
Both Peyton and Olivia LOVE apples. We hope you enjoy this
delicious apple butter recipe. Doesn't it just SOUND like fall?
To all of the waiting families . . . our hearts and minds are
with you during this fall season. The seasons pass so slowly
when you are waiting for a child, but they are oh so enjoyable
once these little ones arrive! And they then go by so quickly!!"
With Warm Wishes,
Cathy and family
Apple Butter
8 apples - peeled, cored and chopped
4 cups white sugar
4 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp salt
1. Fill a slow cooker with diced apples, sugar, cinnamon, cloves
and salt. Cover and cook on high for 1 hour. Reduce heat.
Simmer, stirring occasionally, for 12 hours, or until thick and
dark golden in color.
2. Fill small jars with hot apple butter, leaving about 3/4 inch
space at the top.
Yum!!
"Delicious autumn! My very soul is
wedded to it, and if I were a bird I would fly about the earth
seeking the successive autumns.
